Create a standout addition to your gelato display with this Dinosaur Gelato recipe. Combining a vibrant mint green gelato base with a rich mint ripple, chocolate chips and crunchy Oreo crumb, it delivers a refreshing mint chocolate flavour with texture.

  1. Inside a 5L jug, blend Mint Green at 50g per litre into the prepared base mix until fully combined.
  2. Pour the mixture into the batch freezer and churn according to the manufacturer's instructions.
  3. Before extracting the gelato, place the Mint Topping Sauce in the freezer for approximately 20 minutes to thicken, creating the perfect consistency for rippling.
  4. Extract the gelato into a Napoli pan, rippling through the chilled Mint Topping Sauce while layering with Green Mint Crunch, Oreo Crumb, and Mint Choc Chips.
  5. Place in a blast freezer at -40°C for 10 to 15 minutes to firm up.
  6. Decorate with additional Green Mint Crunch, Oreo Crumb, Mint Choc Chips, and finish with broken Chocolate Stix (Flakes).
